Buckwheat Blend-I met a local grain crusher at our farmers’ market and fell in love with his products. They crush their grains (rather than mill) which keeps the cells intact and provides a more nutritionally dense product. This pancake mix is a blend of crushed buckwheat, crushed wheat, crushed flaxseed, baking powder and sea salt. No sweetener is added to this pancake mix. Customers are encouraged to add honey, maple syrup, or another sweetener of choice. The texture is grainier than many boxed buckwheat pancake mixes, but it is still light and delicious.
